- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Prepare the cookie dough layer by creaming butter and sugars, then adding egg, vanilla, dry ingredients, and chocolate chips.
- Press cookie dough evenly into the bottom of the baking pan.
- Mix peanut butter with powdered sugar (and optional melted butter) until smooth. Spread over cookie dough.
- Make brownie batter by whisking melted butter and sugar, adding eggs and vanilla, then mixing in dry ingredients.
- Pour brownie batter over the peanut butter layer and smooth the top.
- Bake 30–35 minutes or until the top is shiny and edges are set.
- Cool completely before slicing for clean squares.
Notes
For cleaner layers, chill peanut butter before spreading. For extra fudgy brookies, slightly underbake.
