Ingredients
  

Cookie Dough Layer
  • 1.25 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
Peanut Butter Filling
  • 0.75 cup creamy peanut butter
  • 3 tbsp powdered sugar
  • 1 tbsp butter melted, optional
Brownie Layer
  • 0.5 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 0.33 cup unsweetened cocoa powder
  • 0.5 cup all-purpose flour
  • 0.25 tsp salt
  • 0.5 tsp baking powder

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Prepare the cookie dough layer by creaming butter and sugars, then adding egg, vanilla, dry ingredients, and chocolate chips.
  3. Press cookie dough evenly into the bottom of the baking pan.
  4. Mix peanut butter with powdered sugar (and optional melted butter) until smooth. Spread over cookie dough.
  5. Make brownie batter by whisking melted butter and sugar, adding eggs and vanilla, then mixing in dry ingredients.
  6. Pour brownie batter over the peanut butter layer and smooth the top.
  7. Bake 30–35 minutes or until the top is shiny and edges are set.
  8. Cool completely before slicing for clean squares.

Notes

For cleaner layers, chill peanut butter before spreading. For extra fudgy brookies, slightly underbake.
