Ingredients
  

Chicken
  • 2 lb bone-in chicken thighs
  • 4 cloves garlic minced
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tbsp olive oil
Rice
  • 1.5 cups long-grain white rice
  • 3 cups chicken broth
  • 1 tsp turmeric
Green Sauce
  • 1 cup fresh cilantro packed
  • 2 jalapeños seeded
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream

Method
 

  1. Marinate chicken with spices, garlic, olive oil, and lime juice.
  2. Roast chicken at 425°F until golden and cooked through.
  3. Cook rice with onion, garlic, turmeric, and broth until fluffy.
  4. Blend green sauce ingredients until smooth.
  5. Serve chicken over rice with green sauce drizzled on top.

Notes

Green sauce can be made ahead and refrigerated for up to 3 days.
