Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 2 tbsp granulated sugar
Filling
  • 8 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup coconut cream
  • 1 cup crushed pineapple drained
  • 1.5 cups whipped topping

Method
 

  1. Mix graham cracker crumbs, melted butter, and sugar. Press into pie dish and chill.
  2. Beat cream cheese until smooth. Add sugar and vanilla.
  3. Mix in coconut cream until fully combined.
  4. Fold in drained pineapple and whipped topping gently.
  5. Fill crust, smooth top, and refrigerate until set.

Notes

Ensure pineapple is well drained to avoid excess moisture.
