Ingredients
  

Salad
  • 3 cups fresh pineapple cut into chunks
  • 2 cups cucumber thinly sliced
  • 0.25 cup red onion thinly sliced
  • 2 tbsp cilantro or mint chopped
Dressing
  • 2 tbsp lime juice fresh
  • 1 tbsp olive oil
  • 0.25 tsp sea salt
  • 0.25 tsp chili flakes optional
  • 0.5 tsp honey or maple syrup optional

Method
 

  1. Prepare pineapple by removing skin and core, then cutting into chunks.
  2. Thinly slice cucumbers and red onion.
  3. Chop fresh herbs and set aside.
  4. Whisk lime juice, olive oil, salt, chili flakes, and sweetener if using.
  5. Combine pineapple, cucumber, onion, and herbs in a bowl.
  6. Pour dressing over salad and toss gently.
  7. Chill for 15–30 minutes if desired before serving.

Notes

Best served fresh and chilled. Add herbs just before serving for brightest flavor.
