Ingredients
  

Pork Chops
  • 4 boneless pork chops
  • 1 cup pineapple juice
  • 1 cup pineapple chunks fresh or canned
  • 2 tbsp fresh ginger grated
  • 3 cloves garlic minced
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp honey
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 tsp cornstarch mixed with water, optional

Method
 

  1. Combine pineapple juice, ginger, garlic, soy sauce, brown sugar, honey, salt, and pepper to make marinade.
  2. Marinate pork chops for at least 30 minutes or up to 6 hours.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Sear pork chops 3–4 minutes per side until golden brown.
  5. Add marinade and pineapple chunks to skillet and bring to a simmer.
  6. Cook 10–12 minutes, reducing heat to medium.
  7. Stir in cornstarch slurry if thicker glaze is desired.
  8. Serve warm with garnish of green onions or cilantro.

Notes

Great served with rice or roasted vegetables.
