Ingredients
  

Rice
  • 1.5 cups jasmine rice
  • 2 cups water or broth
Stir Fry
  • 2 tbsp vegetable oil
  • 3 cloves garlic minced
  • 0.5 cup onion diced
  • 0.5 cup red bell pepper diced
  • 0.5 cup peas and carrots
  • 1.5 cups pineapple chunks
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 green onions sliced
  • 0.25 cup cilantro optional
  • 0.5 cup cashews optional

Method
 

  1. Rinse rice until water runs clear.
  2. Cook rice with water or broth until tender; fluff and set aside.
  3. Heat oil in skillet over medium heat.
  4. Sauté onion until translucent, then add garlic.
  5. Add bell pepper and mixed vegetables; cook until slightly tender.
  6. Stir in pineapple chunks and cook briefly.
  7. Add cooked rice and toss to combine.
  8. Season with soy sauce, sesame oil, salt, and pepper.
  9. Fold in green onions, cilantro, and cashews before serving.

Notes

Use day-old rice for best texture and adjust seasoning to taste.
