Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk flour, baking powder, and salt together in a bowl.
- Cream butter and sugar until light and fluffy. Add egg and vanilla and mix well.
- Gradually add dry ingredients and milk, mixing until a soft dough forms.
- Mix melted butter and brown sugar. Spoon small circles onto parchment.
- Place pineapple pieces and cherries on caramel circles.
- Scoop dough over fruit and flatten slightly.
- Bake 13–15 minutes until lightly golden. Cool 5 minutes then invert onto rack.
Notes
Drain pineapple well and flip cookies while warm for best release.
