Ingredients
  

  • 1.5-2 lb pork tenderloin trimmed
  • salt to taste
  • black pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 shallot minced
  • 2 cloves garlic minced
  • 0.75 cup heavy cream
  • 0.25 cup Dijon mustard
  • 0.5 cup chicken broth
  • 1 tsp fresh thyme

Method
 

  1. Preheat oven to 400°F (205°C). Season pork with salt and pepper.
  2. Sear pork in olive oil until browned on all sides.
  3. Roast in oven until internal temperature reaches 145°F (63°C). Rest.
  4. Sauté shallot and garlic in butter in the same skillet.
  5. Deglaze with chicken broth and reduce slightly.
  6. Stir in Dijon mustard, cream, and thyme. Simmer until thickened.
  7. Slice pork and return to pan with sauce. Serve warm.

Notes

Do not overcook pork tenderloin; rest before slicing for best texture.
