- Preheat oven to 350°F (175°C) and prepare a mini muffin tin.
- Beat cream cheese, powdered sugar, and vanilla until smooth. Set aside.
- Whisk flour, cocoa powder, baking powder, and salt in a bowl.
- Cream butter and sugar, then add eggs, vanilla, and food coloring.
- Mix dry ingredients into wet ingredients until smooth.
- Fill muffin cups with batter, add cheesecake filling, and top with more batter.
- Bake 14–16 minutes until set. Cool completely.
- Chill, garnish as desired, and serve.
