Ingredients
  

Peanut Butter Filling
  • 1 cup creamy peanut butter
  • 0.25 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
Chocolate Coating
  • 2 cups chocolate chips milk or semi-sweet
  • 1 tbsp coconut oil

Equipment

  • Baking sheet
  • Parchment paper
  • Hand mixer or stand mixer

Method
 

  1. Mix peanut butter and butter until smooth.
  2. Add vanilla and powdered sugar, mixing until thick dough forms.
  3. Roll mixture into balls and place on parchment-lined baking sheet.
  4. Freeze for 20–30 minutes until firm.
  5. Melt chocolate with coconut oil until smooth.
  6. Dip peanut butter balls into chocolate and return to parchment.
  7. Allow chocolate to set completely before serving or storing.

Store refrigerated or frozen for best texture.
