Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter, brown sugar, and granulated sugar until fluffy. Mix in egg and vanilla.
- Whisk flour, baking soda, baking powder, and salt. Add to wet ingredients to form dough.
- Lay Ritz crackers on baking sheet. Add chocolate chips and marshmallows on top.
- Place a tablespoon of dough over each stack, then top with another Ritz cracker.
- Bake 10–12 minutes until golden and slightly crackled.
- Cool on wire racks before serving.
Notes
For extra gooey cookies, add an additional marshmallow during the last 2 minutes of baking.
