Ingredients
  

Cookie Batter
  • 2 sleeves Ritz crackers
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 0.5 cup unsalted butter softened
  • 0.5 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
Filling
  • Chocolate and marshmallows already used above

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar until fluffy. Mix in egg and vanilla.
  3. Whisk flour, baking soda, baking powder, and salt. Add to wet ingredients to form dough.
  4. Lay Ritz crackers on baking sheet. Add chocolate chips and marshmallows on top.
  5. Place a tablespoon of dough over each stack, then top with another Ritz cracker.
  6. Bake 10–12 minutes until golden and slightly crackled.
  7. Cool on wire racks before serving.

Notes

For extra gooey cookies, add an additional marshmallow during the last 2 minutes of baking.
