Ingredients
  

Stuffed Chicken
  • 4 boneless skinless chicken breasts large
  • 1 cup fresh spinach
  • 0.5 cup roasted red peppers sliced
  • 1 cup shredded mozzarella
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt and pepper to taste

Method
 

  1. Slice a pocket into each chicken breast.
  2. Season chicken with salt, pepper, paprika, Italian seasoning, and garlic powder.
  3. Mix spinach, mozzarella, and roasted red peppers in a bowl.
  4. Stuff the filling into each chicken breast and secure with toothpicks if needed.
  5. Sear chicken in olive oil for 2–3 minutes per side.
  6. Bake at 375°F (190°C) for 18–22 minutes until cooked through.
  7. Rest 5 minutes, remove toothpicks, and serve.

Notes

Pat roasted peppers dry to prevent filling from leaking.
