- Slice a pocket into each chicken breast.
- Season chicken with salt, pepper, paprika, Italian seasoning, and garlic powder.
- Mix spinach, mozzarella, and roasted red peppers in a bowl.
- Stuff the filling into each chicken breast and secure with toothpicks if needed.
- Sear chicken in olive oil for 2–3 minutes per side.
- Bake at 375°F (190°C) for 18–22 minutes until cooked through.
- Rest 5 minutes, remove toothpicks, and serve.
Notes
Pat roasted peppers dry to prevent filling from leaking.
