Ingredients
  

  • 1.5 cups orzo pasta
  • 1 zucchini diced
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 cup cherry tomatoes halved
  • 1 red onion sliced
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 0.25 cup parmesan cheese grated

Equipment

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss vegetables with olive oil, salt, pepper, and herbs.
  3. Roast vegetables for 25–30 minutes until tender.
  4. Cook orzo according to package directions and drain.
  5. Combine orzo with roasted vegetables, garlic, and cheese.
  6. Season to taste and serve warm.

Notes

Customize with seasonal vegetables or add protein if desired.
