Ingredients
  

Cookie Batter
  • 1 lb breakfast sausage mild or hot
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 can Rotel tomatoes with green chiles drained well
  • 1.5 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Mix sausage and softened cream cheese until fully combined.
  3. Add drained Rotel and shredded cheese; mix well.
  4. Stir in flour, baking powder, garlic powder, paprika, and salt until a thick dough forms.
  5. Roll into 1-inch balls and place on baking sheet.
  6. Bake 18–22 minutes until golden brown and cooked through.
  7. Cool slightly on a wire rack and serve warm.

Notes

Drain Rotel thoroughly for best texture. Freeze unbaked balls for easy prep later.
