Ingredients
  

  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 2 lb potatoes peeled and cubed
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp fresh thyme chopped
  • 1 tsp fresh rosemary minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Sauté onion until translucent, then add garlic.
  3. Add potatoes and stir to coat.
  4. Pour in broth and simmer until potatoes are tender.
  5. Partially blend soup for rustic texture.
  6. Stir in cream, herbs, salt, and pepper.
  7. Simmer briefly, garnish, and serve warm.

Notes

Adjust texture by blending more or less depending on preference.
