Ingredients
  

Pie Crust
  • 1.25 cups all-purpose flour
  • 0.5 tsp salt
  • 0.5 cup unsalted butter cold and cubed
  • 3-4 tbsp ice water
Honey Filling
  • 0.75 cup honey
  • 0.5 cup granulated sugar
  • 0.25 cup light brown sugar packed
  • 0.5 cup unsalted butter melted
  • 3 eggs large
  • 0.5 cup heavy cream
  • 2 tbsp whole milk
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 0.5 tsp fine sea salt
Topping
  • flaky sea salt for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Prepare and chill pie dough.
  2. Roll out dough, fit into pie dish, and blind bake until lightly golden.
  3. Whisk together honey, sugars, and melted butter until smooth.
  4. Add eggs one at a time, then mix in cream, milk, cornstarch, vanilla, and salt.
  5. Pour filling into warm crust. Reduce oven to 350°F (175°C).
  6. Bake 40–45 minutes until edges are set and center slightly jiggles.
  7. Cool completely, then chill before slicing.
  8. Sprinkle flaky sea salt on top before serving.

Notes

Use high-quality honey for the best flavor. Do not overbake; the pie sets as it cools.
