- Preheat oven to 375°F (190°C). Prepare and chill pie dough.
- Roll out dough, fit into pie dish, and blind bake until lightly golden.
- Whisk together honey, sugars, and melted butter until smooth.
- Add eggs one at a time, then mix in cream, milk, cornstarch, vanilla, and salt.
- Pour filling into warm crust. Reduce oven to 350°F (175°C).
- Bake 40–45 minutes until edges are set and center slightly jiggles.
- Cool completely, then chill before slicing.
- Sprinkle flaky sea salt on top before serving.
Notes
Use high-quality honey for the best flavor. Do not overbake; the pie sets as it cools.
