Method
- Heat olive oil in a large skillet over medium heat.
- Add sausage and cook until browned. Remove and set aside.
- Sauté onion and bell peppers until softened.
- Stir in garlic, paprika, thyme, salt, and pepper.
- Add rice and toast for 1–2 minutes.
- Pour in chicken broth and tomato paste; stir well.
- Return sausage to the skillet and bring to a simmer.
- Cover and cook for 18–20 minutes until rice is tender.
- Stir in peas during the last 2 minutes, garnish, and serve.
Notes
For extra flavor, use spicy sausage or add a pinch of cayenne pepper.
