Ingredients
  

Skillet Base
  • 1 tbsp olive oil
  • 12 oz smoked sausage sliced
  • 1 onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 cup long-grain white rice uncooked
  • 2 cups chicken broth
  • 1 tbsp tomato paste
  • 0.5 cup frozen peas optional

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sausage and cook until browned. Remove and set aside.
  3. Sauté onion and bell peppers until softened.
  4. Stir in garlic, paprika, thyme, salt, and pepper.
  5. Add rice and toast for 1–2 minutes.
  6. Pour in chicken broth and tomato paste; stir well.
  7. Return sausage to the skillet and bring to a simmer.
  8. Cover and cook for 18–20 minutes until rice is tender.
  9. Stir in peas during the last 2 minutes, garnish, and serve.

Notes

For extra flavor, use spicy sausage or add a pinch of cayenne pepper.
