Method
- Brown sausage in olive oil over medium-high heat until golden on all sides; remove and set aside.
- Add sliced onions to the skillet and cook until softened and lightly caramelized.
- Stir in sliced bell peppers and cook until tender.
- Add garlic, Italian seasoning, salt, pepper, and red pepper flakes; cook 1–2 minutes.
- Deglaze with balsamic vinegar or wine if desired.
- Stir in crushed tomatoes for a saucy version.
- Slice sausage if desired and return to skillet, stirring to combine.
- Simmer 10–15 minutes before serving.

Excellent served in Italian rolls, over pasta, rice, or polenta.
