Main Ingredients
  • 1.5 lbs Italian sausage links sweet or spicy
  • 3 bell peppers sliced, mixed colors
  • 2 onions sliced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional
  • 0.5 cup crushed tomatoes optional
  • 2 tbsp balsamic vinegar or white wine optional

Method
 

  1. Brown sausage in olive oil over medium-high heat until golden on all sides; remove and set aside.
  2. Add sliced onions to the skillet and cook until softened and lightly caramelized.
  3. Stir in sliced bell peppers and cook until tender.
  4. Add garlic, Italian seasoning, salt, pepper, and red pepper flakes; cook 1–2 minutes.
  5. Deglaze with balsamic vinegar or wine if desired.
  6. Stir in crushed tomatoes for a saucy version.
  7. Slice sausage if desired and return to skillet, stirring to combine.
  8. Simmer 10–15 minutes before serving.

Notes

Excellent served in Italian rolls, over pasta, rice, or polenta.
