Ingredients
  

  • 12 oz Italian sausage casings removed
  • 12 oz short pasta penne or rigatoni
  • 4 cups fresh spinach
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 3 cups chicken broth
  • 0.5 cup Parmesan cheese grated

Method
 

  1. Brown sausage in olive oil in a large skillet over medium heat.
  2. Add onion and cook until softened, then stir in garlic.
  3. Add pasta and broth, bring to a simmer, cover and cook until pasta is tender.
  4. Stir in spinach until wilted.
  5. Remove from heat and stir in Parmesan cheese before serving.

Notes

Adjust seasoning and liquid as needed for desired consistency.
