- Preheat oven to 425°F (220°C). Place a cast iron skillet in the oven to heat.
- In a bowl, whisk eggs, milk, flour, salt, and pepper until smooth.
- Carefully remove hot skillet and add butter, swirling to coat.
- Pour batter into skillet and top evenly with bacon and cheese.
- Bake 15–18 minutes until puffed and golden.
- Remove from oven, garnish with chives, slice, and serve immediately.
Notes
Best served fresh while hot and puffed. Customize with vegetables or different cheeses for variation.
