Ingredients
  

Cookie Pie Batter
  • 1.5 cups oat flour
  • 0.5 cup almond flour
  • 0.5 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp sea salt
  • 0.5 cup coconut sugar
  • 0.33 cup maple syrup
  • 0.33 cup coconut oil melted
  • 0.25 cup Greek yogurt plain
  • 1 egg large
  • 2 tsp vanilla extract
  • 0.75 cup dark chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and grease a deep dish pie pan.
  2. Whisk together oat flour, almond flour, baking soda, baking powder, and salt.
  3. In another bowl mix coconut sugar, maple syrup, melted coconut oil, Greek yogurt, egg, and vanilla.
  4. Combine wet and dry ingredients and stir until a thick batter forms.
  5. Fold in chocolate chips, reserving some for topping.
  6. Press batter evenly into the prepared pan and sprinkle remaining chips on top.
  7. Bake for about 25 minutes until edges are golden and center is just set.
  8. Cool before slicing and serving.

Notes

Do not overbake for a gooey center. Can be made dairy-free using coconut yogurt.
