Ingredients
  

Salad
  • 6 carrots peeled into ribbons
  • 2 tbsp toasted sesame seeds
  • 2 green onions thinly sliced
Dressing
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce or tamari
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp lime or lemon juice
  • 1 tbsp fresh ginger grated
  • 1 garlic clove minced

Method
 

  1. Using a vegetable peeler, shave carrots lengthwise into ribbons and place in a large bowl.
  2. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey or maple syrup, citrus juice, ginger, and garlic.
  3. Pour dressing over carrot ribbons and toss gently until evenly coated.
  4. Add sesame seeds and green onions, tossing lightly again.
  5. Let rest 5–10 minutes for flavors to develop, then serve.

Notes

Use tamari for gluten-free and maple syrup for vegan. Add chili flakes for heat or top with protein for a full meal.
