Method
- Using a vegetable peeler, shave carrots lengthwise into ribbons and place in a large bowl.
- In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey or maple syrup, citrus juice, ginger, and garlic.
- Pour dressing over carrot ribbons and toss gently until evenly coated.
- Add sesame seeds and green onions, tossing lightly again.
- Let rest 5–10 minutes for flavors to develop, then serve.
Notes
Use tamari for gluten-free and maple syrup for vegan. Add chili flakes for heat or top with protein for a full meal.
