Ingredients
  

  • 4 fillets salmon
  • 1.5 lbs baby potatoes halved
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 lemon zested and juiced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • salt and black pepper to taste

  • Mixing bowl
  • Parchment paper

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss potatoes with olive oil, paprika, salt, and pepper. Spread on baking sheet and roast for 15 minutes.
  3. Season salmon with garlic, lemon zest, salt, pepper, and oregano.
  4. Remove pan from oven, add vegetables, and place salmon among them.
  5. Drizzle with lemon juice and return to oven.
  6. Roast 12–15 minutes until salmon flakes easily and vegetables are tender.
  7. Garnish with parsley and serve warm.
