Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss potatoes with olive oil, paprika, salt, and pepper. Spread on baking sheet and roast for 15 minutes.
- Season salmon with garlic, lemon zest, salt, pepper, and oregano.
- Remove pan from oven, add vegetables, and place salmon among them.
- Drizzle with lemon juice and return to oven.
- Roast 12–15 minutes until salmon flakes easily and vegetables are tender.
- Garnish with parsley and serve warm.
