Ingredients
  

Salad
  • 3 Persian cucumbers finely diced
  • 3 tomatoes finely diced
  • 0.5 red onion very finely chopped
  • 2 tbsp parsley chopped
  • 1 tbsp mint chopped optional
Dressing
  • 3 tbsp lime juice fresh
  • 2 tbsp olive oil
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper

Equipment

  • Mixing bowl
  • Chef’s knife
  • Cutting board
  • Citrus juicer

Method
 

  1. Wash and dry all vegetables.
  2. Finely dice cucumbers and tomatoes into small uniform cubes.
  3. Very finely chop onion.
  4. Place vegetables in a mixing bowl with herbs.
  5. Whisk lime juice, olive oil, salt, and pepper.
  6. Pour dressing over salad and toss gently.
  7. Taste and adjust seasoning.
  8. Serve immediately or chill briefly before serving.

Notes

Use freshest vegetables possible for best flavor. Add dressing just before serving to prevent excess moisture.
