Ingredients
  

Salad
  • 1 lb cooked shrimp peeled and deveined
  • 2 avocados diced
  • 1.5 cups cherry tomatoes chopped
  • 0.25 cup red onion finely diced
  • 0.25 cup fresh cilantro chopped
Dressing
  • 2 tbsp olive oil
  • 2 tbsp lime juice fresh
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 0.5 tsp garlic powder

Method
 

  1. Prepare shrimp by thawing if frozen and patting dry.
  2. Dice avocados, chop tomatoes, finely dice onion, and chop herbs.
  3. In a small bowl, whisk olive oil, lime juice, salt, pepper, and garlic powder.
  4. Place shrimp, avocado, tomatoes, onion, and herbs into a large bowl.
  5. Pour dressing over salad and toss gently to combine.
  6. Taste and adjust seasoning if needed.
  7. Chill briefly if desired for enhanced flavor.
  8. Serve fresh and enjoy.

Notes

Best served fresh. Add avocado just before serving to prevent browning.
