Ingredients
  

Shrimp Scampi Pasta Bake
  • 1 lb shrimp, peeled and deveined
  • 12 oz linguine or spaghetti
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 0.5 cup dry white wine
  • 1 lemon (juice and zest)
  • 1 cup parmesan cheese, grated
  • 1 cup mozzarella, shredded
  • 0.5 tsp chili flakes
  • salt and pepper to taste
  • 0.5 cup breadcrumbs
  • 2 tbsp melted butter for topping
  • 3 tbsp fresh parsley, chopped

Method
 

  1. Cook linguine in salted water until just under al dente; drain and set aside.
  2. Season shrimp with salt, pepper, and chili flakes.
  3. Sear shrimp in olive oil over medium-high heat for 1–2 minutes per side; remove and set aside.
  4. Melt butter in the skillet, add garlic, and cook for 1 minute until fragrant.
  5. Add white wine and lemon juice; simmer for 2 minutes.
  6. Lower heat, stir in heavy cream, and simmer 3–4 minutes.
  7. Add parmesan until melted and smooth; adjust consistency with pasta water if needed.
  8. Combine pasta, sauce, shrimp, and half of the mozzarella; transfer to baking dish.
  9. Top with remaining mozzarella and buttered breadcrumbs.
  10. Bake at 375°F (190°C) for 18–22 minutes until golden and bubbly.
  11. Finish with parsley and lemon zest before serving.

Notes

For extra flavor, add garlic powder or a splash of pasta water to loosen the sauce before baking.
