Ingredients
  

Salad
  • 4 cups watermelon cubed
  • 1.5 cups cucumber sliced
  • 0.75 cup feta cheese crumbled
  • 2 tbsp fresh mint chopped
Dressing
  • 2 tbsp olive oil
  • 1 tbsp lime juice or lemon juice
  • 0.25 tsp salt optional
  • 0.25 tsp black pepper

Method
 

  1. Place cubed watermelon in a large mixing bowl.
  2. Add sliced cucumber and gently combine.
  3. Crumble feta cheese over the mixture.
  4. In a small bowl whisk olive oil, lime juice, salt, and pepper.
  5. Drizzle dressing over salad.
  6. Sprinkle chopped mint on top.
  7. Gently toss until evenly coated.
  8. Serve immediately while fresh and chilled.
