Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix peanut butter, granulated sugar, and brown sugar until smooth.
- Stir in beaten egg and vanilla extract until creamy.
- Add flour, baking soda, and salt. Mix until a soft dough forms.
- Roll into a ball and place on baking sheet. Flatten with fork.
- Bake 9–11 minutes until lightly golden.
- Cool briefly and enjoy warm.
Notes
Do not overbake; cookie firms as it cools. Dough can be frozen for later baking.
