Ingredients
  

Pork Tenderloin
  • 2 lbs pork tenderloin
Apple Butter Sauce
  • 1 cup apple butter
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp fresh thyme leaves plus extra for garnish
  • 0.5 tsp ground cinnamon optional

Method
 

  1. Pat the pork tenderloin dry with paper towels.
  2. In a medium bowl, whisk together apple butter, Dijon mustard, apple cider vinegar, brown sugar, minced garlic, smoked paprika, onion powder, salt, black pepper, thyme, and cinnamon.
  3. Heat a skillet over medium-high heat and sear the pork on all sides until lightly browned (optional but recommended).
  4. Place the pork in the slow cooker and pour the apple butter sauce over it.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours until the pork reaches 145°F (63°C).
  6. Optional: Reduce the sauce in a small saucepan over medium heat until thickened.
  7. Slice the pork and drizzle with sauce. Garnish with fresh thyme and serve.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently to avoid drying out the pork.
