- Pat the pork tenderloin dry with paper towels.
- In a medium bowl, whisk together apple butter, Dijon mustard, apple cider vinegar, brown sugar, minced garlic, smoked paprika, onion powder, salt, black pepper, thyme, and cinnamon.
- Heat a skillet over medium-high heat and sear the pork on all sides until lightly browned (optional but recommended).
- Place the pork in the slow cooker and pour the apple butter sauce over it.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until the pork reaches 145°F (63°C).
- Optional: Reduce the sauce in a small saucepan over medium heat until thickened.
- Slice the pork and drizzle with sauce. Garnish with fresh thyme and serve.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat gently to avoid drying out the pork.
