Ingredients
  

Pudding Base
  • 4 ripe bananas sliced
  • 0.5 cup unsalted butter melted
  • 1 cup brown sugar packed
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg optional
  • 1 tbsp rum extract or 2 tbsp dark rum
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3 eggs large
  • 0.25 tsp salt
Optional Bread Layer
  • 4 cups brioche or challah cubed

Method
 

  1. Grease the slow cooker with butter or nonstick spray.
  2. In a saucepan, melt butter and stir in brown sugar, vanilla, cinnamon, nutmeg, and rum extract to create caramel.
  3. Add sliced bananas and cook 1–2 minutes until coated.
  4. In a bowl, whisk milk, heavy cream, eggs, and salt until smooth.
  5. Add cubed bread to slow cooker if using, then pour caramel-banana mixture over it.
  6. Pour custard mixture over everything and gently press down.
  7. Cook on LOW for 3–4 hours until set.
  8. Let rest 10–15 minutes before serving warm.

Notes

Top with caramel sauce, pecans, or vanilla ice cream for an indulgent serving.
