- Grease the slow cooker with butter or nonstick spray.
- In a saucepan, melt butter and stir in brown sugar, vanilla, cinnamon, nutmeg, and rum extract to create caramel.
- Add sliced bananas and cook 1–2 minutes until coated.
- In a bowl, whisk milk, heavy cream, eggs, and salt until smooth.
- Add cubed bread to slow cooker if using, then pour caramel-banana mixture over it.
- Pour custard mixture over everything and gently press down.
- Cook on LOW for 3–4 hours until set.
- Let rest 10–15 minutes before serving warm.
Notes
Top with caramel sauce, pecans, or vanilla ice cream for an indulgent serving.
