Slow Cooker Beef Stroganoff

Ingredients
  

Stroganoff
  • 2 lbs beef stew meat
  • 1 onion diced
  • 3 cups mushrooms sliced
  • 3 cloves garlic minced
  • 1.5 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1.5 cups sour cream
  • 4 tbsp cream cheese
  • 2 tbsp cornstarch optional
  • 12 oz egg noodles for serving

Method
 

  1. Place beef, mushrooms, garlic, and onion in the slow cooker.
  2. Pour in beef broth, Worcestershire sauce, smoked paprika, salt, and pepper.
  3. Cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef is tender.
  4. Stir in sour cream and cream cheese until smooth and creamy.
  5. To thicken, mix cornstarch and water and stir it into the slow cooker for 10–15 minutes.
  6. Serve stroganoff over hot egg noodles and garnish with parsley.

Notes

For extra flavor, brown the beef before adding it to the slow cooker.
