Slow Cooker Teriyaki Meatballs

Ingredients
  

Meatballs
  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 eggs
  • 3 cloves garlic minced
  • 1 tbsp ginger freshly grated
  • 3 green onions sliced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • salt and pepper to taste
Teriyaki Sauce
  • 1 cup soy sauce
  • 1 cup water
  • 0.75 cup brown sugar
  • 2 cloves garlic minced
  • 1 tbsp ginger minced
  • 1 tbsp rice vinegar
  • 2 tbsp cornstarch
  • 2 tbsp water for slurry

Equipment

  • Mixing bowls

  • Hand mixer or stand mixer

Method
 

  1. Mix the ground beef, breadcrumbs, eggs, garlic, ginger, soy sauce, sesame oil, salt, and pepper.
  2. Shape the mixture into 1–1.5-inch meatballs.
  3. Place meatballs into the slow cooker.
  4. Whisk soy sauce, water, brown sugar, garlic, ginger, and rice vinegar.
  5. Pour teriyaki sauce over the meatballs.
  6. Cook on low for 4–5 hours or on high for 2–3 hours.
  7. Stir gently halfway through cooking.
  8. Mix cornstarch and water to make slurry and stir into slow cooker.
  9. Cook 15–20 more minutes until sauce thickens.
  10. Garnish with green onions and sesame seeds before serving.

Notes

For a sweeter glaze, add 1–2 tablespoons more brown sugar.
