Cookie Dough Layer
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1.75 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 cup chocolate chips
Middle Layer
  • 24 cream-filled sandwich cookies
Brownie Layer
  • 0.5 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.33 cup unsweetened cocoa powder
  • 0.5 cup all-purpose flour
  • 0.25 tsp salt
  • 0.25 tsp baking powder

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9x13-inch pan with parchment paper.
  2. Cream butter and sugars until fluffy. Mix in egg and vanilla.
  3. Add flour, baking soda, and salt. Fold in chocolate chips.
  4. Press dough evenly into pan.
  5. Arrange sandwich cookies in a single layer.
  6. Whisk melted butter and sugar. Add eggs and vanilla.
  7. Stir in cocoa powder, flour, salt, and baking powder.
  8. Spread brownie batter over cookies.
  9. Bake 35–40 minutes until set at edges.
  10. Cool completely before slicing.

Notes

For cleaner slices, chill brownies 30 minutes before cutting.
