  • 4 bone-in pork chops thick cut
  • 4 potatoes sliced
  • 1 onion sliced
  • 3 cloves garlic minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk or cream
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp salt
  • 1 tsp pepper

Method
 

  1. Season pork chops with salt, pepper, paprika, thyme, and parsley.
  2. Sear pork chops in olive oil until golden brown; set aside.
  3. Sauté onions in butter until caramelized; add garlic.
  4. Stir in flour to create a paste and cook for 2 minutes.
  5. Whisk in broth and milk until gravy forms.
  6. Layer potatoes into the gravy and return pork chops to the skillet.
  7. Simmer covered for 40–50 minutes until potatoes are tender.

Notes

Use bone-in chops for best tenderness.
