Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together dry ingredients in a medium bowl.
- Cream butter and brown sugar until light and fluffy.
- Add egg, vanilla, and pumpkin purée, mixing until smooth.
- Gradually add dry ingredients, mixing just until combined.
- Scoop batter onto baking sheets and bake 12–15 minutes.
- Cool completely on wire racks.
- Prepare frosting and spread over cooled cookies.
