Ingredients
  

Salad
  • 1 cup quinoa uncooked
  • 2 cups water or broth
  • 1 cup black beans drained
  • 1 cup corn
  • 1 red bell pepper diced
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 0.25 cup red onion chopped
  • 0.25 cup cilantro chopped
Dressing
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.25 tsp smoked paprika

Equipment

Method
 

  1. Rinse quinoa thoroughly under cold water.
  2. Cook quinoa with water or broth for about 15 minutes until liquid is absorbed.
  3. Let quinoa sit covered 5 minutes, then fluff and cool.
  4. Combine quinoa, beans, corn, pepper, tomatoes, avocado, onion, and cilantro in a bowl.
  5. Whisk dressing ingredients in a small bowl.
  6. Pour dressing over salad and toss gently.
  7. Chill 20 minutes before serving for best flavor.

Notes

Add avocado just before serving for freshest texture.
