Ingredients
  

  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes sliced
  • 1 cup heavy cream
  • 4 cups fresh spinach
  • 0.5 cup Parmesan cheese grated
  • 0.25 tsp red pepper flakes optional
  • salt and black pepper to taste

Method
 

  1. Cook spaghetti in salted boiling water until al dente. Reserve pasta water and drain.
  2. Heat olive oil in a skillet and sauté garlic until fragrant.
  3. Add sun-dried tomatoes and cook briefly.
  4. Stir in heavy cream and simmer until slightly thickened.
  5. Add spinach and cook until wilted.
  6. Mix in Parmesan, seasoning, and red pepper flakes.
  7. Toss spaghetti with sauce, adjusting with pasta water as needed.

Notes

Best served immediately while hot and creamy.
