- Heat olive oil in a medium saucepan over medium heat.
- Add rice and toast for 3–5 minutes until lightly golden.
- Stir in onion and cook 2–3 minutes until softened. Add garlic and cook 30 seconds.
- Add chili powder, cumin, paprika, pepper, and salt. Stir well.
- Mix in tomato sauce until rice is evenly coated.
- Pour in broth, stir once, and bring to a gentle boil.
- Reduce heat to low, cover, and simmer for 18–20 minutes until liquid is absorbed.
- Remove from heat, rest 5 minutes, fluff with a fork, and serve.
Notes
For extra flavor, squeeze fresh lime juice over the rice before serving.
