- Heat vegetable oil in a large pot over medium heat. Add garlic and ginger and sauté until fragrant.
- Stir in chili garlic paste, soy sauce, sesame oil, and sugar. Mix well.
- Pour in chicken broth and bring to a gentle boil.
- Add sliced chicken and simmer for 6–8 minutes until cooked through.
- Add mushrooms and bell pepper and simmer for 3–4 minutes.
- Cook noodles separately according to package directions. Drain and divide into bowls.
- Stir lime juice into the soup and adjust seasoning if needed.
- Ladle soup over noodles and garnish with green onions and cilantro.

Adjust chili paste for desired heat. Add soft-boiled eggs or extra vegetables for variation.
