Ingredients
  

Soup Base
  • 2 boneless skinless chicken breasts thinly sliced
  • 6 cups chicken broth low sodium
  • 6 oz rice noodles or egg noodles
  • 1 tbsp vegetable oil
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp chili garlic paste adjust to taste
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar or honey
  • 1 cup mushrooms sliced
  • 1 red bell pepper thinly sliced
  • 2 green onions sliced
  • 1 lime juiced
  • fresh cilantro for garnish

Method
 

  1. Heat vegetable oil in a large pot over medium heat. Add garlic and ginger and sauté until fragrant.
  2. Stir in chili garlic paste, soy sauce, sesame oil, and sugar. Mix well.
  3. Pour in chicken broth and bring to a gentle boil.
  4. Add sliced chicken and simmer for 6–8 minutes until cooked through.
  5. Add mushrooms and bell pepper and simmer for 3–4 minutes.
  6. Cook noodles separately according to package directions. Drain and divide into bowls.
  7. Stir lime juice into the soup and adjust seasoning if needed.
  8. Ladle soup over noodles and garnish with green onions and cilantro.

Notes

Adjust chili paste for desired heat. Add soft-boiled eggs or extra vegetables for variation.
