Ingredients
  

Chicken
  • 2 large chicken breasts halved horizontally
  • 1 cup buttermilk
  • 1 tsp hot sauce
Coating
  • 1.5 cups all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp cayenne pepper
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 eggs
  • 2 tbsp water
Buffalo Sauce
  • 0.5 cup hot sauce
  • 0.25 cup unsalted butter
  • 1 tbsp honey
  • 0.5 tsp garlic powder
Assembly
  • 4 brioche buns
  • 4 leaves lettuce
  • 0.5 cup pickles sliced
  • 0.5 cup ranch or blue cheese dressing

Method
 

  1. Slice chicken breasts horizontally to create four cutlets.
  2. Mix buttermilk and hot sauce, then marinate chicken 30 minutes.
  3. Whisk flour, spices, salt, and pepper.
  4. Beat eggs with water.
  5. Dredge chicken in flour, egg, then flour again.
  6. Heat oil to 350°F and fry chicken until golden and cooked through.
  7. Melt butter with hot sauce, honey, and garlic powder.
  8. Toss fried chicken in buffalo sauce.
  9. Toast buns and assemble with lettuce, chicken, pickles, and dressing.

Notes

Adjust spice level by increasing or decreasing cayenne and hot sauce.
