Ingredients
  

Meatballs
  • 1 lb ground chicken
  • 0.5 cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic minced
  • 2 tbsp green onions sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Firecracker Sauce
  • 0.5 cup mayonnaise
  • 0.25 cup sweet chili sauce
  • 2-3 tbsp sriracha adjust to taste
  • 1 tbsp honey
  • 1 tsp rice vinegar
  • 1 tsp soy sauce

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, green onions, soy sauce, sesame oil, salt, and pepper.
  3. Mix gently until just combined, then form into evenly sized meatballs.
  4. Place meatballs on prepared baking sheet and bake for 18–22 minutes until cooked through.
  5. In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and soy sauce.
  6. Transfer warm meatballs to a bowl and toss with firecracker sauce until coated.
  7. Garnish with green onions and sesame seeds before serving.

Notes

Adjust spice level by increasing or decreasing sriracha. Great served over rice or as a party appetizer.
