Main Ingredients
  • 1 cup dried lentils rinsed
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tsp ginger grated
  • 3 cups vegetable broth
  • 1 can diced tomatoes 14 oz
  • 4 cups fresh spinach
Spices
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp turmeric
  • 0.5 tsp chili flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 lemon juiced

Equipment

Method
 

  1. Rinse lentils thoroughly and set aside.
  2. Heat olive oil in a large pot over medium heat and sauté onion until soft.
  3. Add garlic and ginger and cook until fragrant.
  4. Stir in cumin, paprika, turmeric, chili flakes, salt, and pepper.
  5. Add lentils, tomatoes, and broth and bring to a boil.
  6. Reduce heat and simmer 25–30 minutes until lentils are tender.
  7. Add spinach and cook until wilted.
  8. Stir in lemon juice, adjust seasoning, and serve hot.

Notes

Adjust spice level to taste. Dish thickens as it sits.
