Method
- Rinse lentils thoroughly and set aside.
- Heat olive oil in a large pot over medium heat and sauté onion until soft.
- Add garlic and ginger and cook until fragrant.
- Stir in cumin, paprika, turmeric, chili flakes, salt, and pepper.
- Add lentils, tomatoes, and broth and bring to a boil.
- Reduce heat and simmer 25–30 minutes until lentils are tender.
- Add spinach and cook until wilted.
- Stir in lemon juice, adjust seasoning, and serve hot.
Notes
Adjust spice level to taste. Dish thickens as it sits.
