Ingredients
  

  • 2 tbsp vegetable oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 12 oz mushrooms sliced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp curry powder
  • 0.5 tsp turmeric
  • 1 cup crushed tomatoes
  • 1 cup coconut milk full-fat
  • 4 cups fresh spinach

Method
 

  1. Heat oil in a large skillet over medium heat.
  2. Sauté onion until soft and translucent.
  3. Add garlic and ginger and cook until fragrant.
  4. Add mushrooms and cook until browned.
  5. Stir in spices and toast briefly.
  6. Add crushed tomatoes and simmer.
  7. Pour in coconut milk and stir.
  8. Add spinach and cook until wilted.

Notes

Adjust spice level to taste and serve with rice or naan.
