Ingredients
  

Spinach Mixture
  • 20 oz frozen chopped spinach thawed and drained
  • 1.5 cups breadcrumbs
  • 1 cup Parmesan cheese grated
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 eggs large
  • 0.25 cup olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Squeeze all excess moisture from thawed spinach and place in a large bowl.
  3. Add breadcrumbs, Parmesan cheese, onion, and garlic. Mix well.
  4. Stir in eggs, olive oil, salt, pepper, and Italian seasoning until combined.
  5. Roll mixture into 1-inch balls and place evenly on baking sheet.
  6. Bake for 20–25 minutes, turning once, until golden brown.
  7. Cool slightly on wire rack before serving.

Notes

Spinach Balls can be frozen before or after baking and reheated as needed.
