Ingredients
  

Meatballs
  • 1 lb ground beef or turkey
  • 0.5 cup breadcrumbs
  • 1 egg large
  • 2 cloves garlic minced
  • 0.25 cup onion or shallot finely chopped
  • 0.25 cup Parmesan cheese grated
  • 2 tbsp milk
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
Balsamic Glaze
  • 0.5 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp soy sauce
  • 1 clove garlic minced
  • 1 tbsp butter
Topping
  • 4 oz goat cheese crumbled

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground meat, breadcrumbs, egg, garlic, onion, Parmesan, milk, olive oil, salt, and pepper. Mix gently.
  3. Shape mixture into evenly sized meatballs and place on prepared baking sheet.
  4. Bake for 15–18 minutes until cooked through and lightly browned.
  5. In a saucepan, combine balsamic vinegar, honey, brown sugar, Dijon, soy sauce, garlic, and butter. Simmer until thickened.
  6. Add baked meatballs to glaze and toss to coat evenly.
  7. Transfer to serving dish and top with crumbled goat cheese.
  8. Garnish with herbs and serve warm.

Notes

For extra flavor, use aged balsamic vinegar and finish with fresh herbs.
