Ingredients
  

Chicken
  • 2 lbs boneless skinless chicken cut into pieces
  • salt to taste
  • black pepper to taste
  • 2 tbsp olive oil
Cranberry Orange Sauce
  • 1 cup cranberries fresh or frozen
  • 0.75 cup orange juice fresh
  • 1 tbsp orange zest
  • 0.33 cup soy sauce low sodium
  • 0.25 cup honey
  • 2 tbsp rice vinegar
  • 1 tbsp ketchup
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
Thickener
  • 1 tbsp cornstarch
  • 2 tbsp water

  • Large skillet
  • Mixing bowl

Method
 

  1. Season chicken with salt and pepper.
  2. Heat oil in a skillet and sear chicken until golden; remove and set aside.
  3. Sauté garlic and ginger in the same pan until fragrant.
  4. Add cranberries, orange juice, zest, soy sauce, honey, vinegar, and ketchup. Simmer.
  5. Return chicken to the pan and cook until heated through.
  6. Stir cornstarch with water and add to sauce. Cook until thick and glossy.
  7. Garnish and serve warm.

Notes

Adjust sweetness by adding more vinegar or reducing honey. Great served over rice.
