Sticky Pomegranate Lamb Chops

Ingredients
  

Lamb
  • 8 lamb chops rib or loin
Marinade & Glaze
  • 1 cup pomegranate juice
  • 2 tbsp pomegranate molasses optional
  • 3 cloves garlic minced
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice
Garnish
  • 2 tbsp parsley chopped
  • 0.25 cup pomegranate seeds

Equipment

  • Mixing bowls
  • Skillet or grill pan
  • Small saucepan
  • Tongs

Method
 

  1. Whisk together marinade ingredients until combined.
  2. Coat lamb chops in marinade and refrigerate at least 1 hour.
  3. Remove lamb from fridge 20 minutes before cooking.
  4. Heat skillet over medium high heat and lightly oil.
  5. Sear lamb chops 3–4 minutes per side.
  6. Simmer reserved marinade until thickened into glaze.
  7. Brush glaze onto chops during final minute of cooking.
  8. Rest 5 minutes, garnish, and serve.

Notes

For deeper flavor marinate overnight. Add chili flakes for heat.
