Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 1 egg large
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 0.5 cup fresh strawberries finely chopped
  • 2 tbsp strawberry jam
Cheesecake Filling
  • 6 oz cream cheese softened
  • 0.25 cup powdered sugar
  • 0.5 tsp vanilla extract

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Beat cream cheese, powdered sugar, and vanilla until smooth. Freeze teaspoon portions until firm.
  2. Preheat oven to 350°F and line baking sheets with parchment.
  3. Whisk flour, baking soda, baking powder, and salt.
  4. Cream butter and sugars until light and fluffy.
  5. Mix in egg, yolk, and vanilla.
  6. Add dry ingredients gradually until dough forms.
  7. Fold in strawberries and jam gently.
  8. Wrap dough around frozen filling portions and seal.
  9. Bake 13–16 minutes until edges set.
  10. Cool on rack before serving.

Notes

Freeze filling before stuffing for best results and chill dough if sticky.
