Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream whipped
  • 0.75 cup fresh strawberries finely chopped
Strawberry Crunch Topping
  • 1 cup golden sandwich cookies crushed
  • 3 tbsp strawberry gelatin powder dry
  • 4 tbsp unsalted butter melted

Equipment

Method
 

  1. Beat softened cream cheese until smooth.
  2. Add powdered sugar and vanilla extract; mix well.
  3. Fold in whipped cream until light and fluffy.
  4. Gently fold in chopped strawberries.
  5. Mix crushed cookies, strawberry gelatin powder, and melted butter to make crunch topping.
  6. Fill taco shells with cheesecake mixture.
  7. Sprinkle or dip tacos in strawberry crunch topping.
  8. Chill 30 minutes before serving.

Notes

For best texture, coat taco shells with white chocolate before filling.
