Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add egg, vanilla, and strawberry gelatin powder. Mix until combined.
- Gradually mix in dry ingredients, then add milk to form a soft dough.
- Roll dough into balls and coat in sanding sugar if desired.
- Place on baking sheets and bake 9–11 minutes until edges are set.
- Immediately press a chocolate kiss into the center of each cookie. Cool completely.
Notes
Do not overbake; cookies should remain soft. Chocolate will firm as cookies cool.
