Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 3 tbsp strawberry gelatin powder dry mix
  • 2 tbsp milk
  • 0.25 cup sanding sugar optional for rolling
Topping
  • 24-30 chocolate kiss candies unwrapped

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add egg, vanilla, and strawberry gelatin powder. Mix until combined.
  5. Gradually mix in dry ingredients, then add milk to form a soft dough.
  6. Roll dough into balls and coat in sanding sugar if desired.
  7. Place on baking sheets and bake 9–11 minutes until edges are set.
  8. Immediately press a chocolate kiss into the center of each cookie. Cool completely.

Notes

Do not overbake; cookies should remain soft. Chocolate will firm as cookies cool.
